Description

Polar Ice Creamery modified with different ratios and reduced sweetness. Maintained a balance recipe on calculator.

Instructions

Roast 3-4 halved bananas at 350 deg F for ~15 minutes. Optional to sprinkle some sugar on top of the halved bananas before baking.

Make a mixture of milk powder, sugar, and dextrose

Add to pot: SMP/sugar mixture, milk, cream, corn syrup, egg yolks, salt. Continuously stir over medium/low medium heat to keep eggs from scrambling. Reach 80C/176F. Let mixture cool in ice bath until ~100-120 deg F. Stick blend in guar gum. Add roasted bananas into the mixture to allow to steep for 24 hours in fridge.

Remove the bananas, give the base a quick blend, churn in machine.

(Ice cream will have more fat than listed on the calculator due to not being able to not include the bananas)

Optional: Milk or Dark Chocolate Stracciatella

Melt 100-120 grams of quality chocolate. Dark chocolate 70-72% preferred. Can mix with coconut oil or vegetable oil (10-15%) of mixture if desired, but I've had no issues with using a quality chocolate by itself. In the last few minutes of churning, stream it into the mix
