I'm using Erythritol for it's freezing point depression here. You might as well swap it for 40g Dextrose, if you don't mind some extra calories in exchange for extra fullness.
The recipe is roughly sized for one standard Ninja Creami pint.
Instructions
- Cut seedless watermelon into chunks
- Puree using immersion blender or food processor until smooth
- Add lemon/lime juice
- Mix dry ingredients (Inulin, Erythritol, Xanthan Gum, Salt)
- Add dry ingredient mix slowly, keep blending the mixture, break up clumps until uniform
- Pour into Ninja Creami container and let it rest in the fridge for 15-30 minutes
- Freeze for at least 24 hours
- Spin using Ninja Creami sorbet setting
