Polar Pistachio Gelato

Instructions

  1. Unshell roasted pistachios (lose approx 1/2 weight)
  2. Lightly Blend them with half tablespoon of sugar + skim milk powder mixture
  3. Warm milk and spoon about 100ml into pistachio blend
  4. Continue blending till it turns to pistachio liquid
  5. Add Remaining Sugar, Milk Powder into warm milk and dissolve sugar
  6. Add remaining ingredients (+ guar gum, salt, syrup) into milk and whisk/blend together
  7. Periodically stir mixture while freezing so solids dont settle on the bottom
