Roasted peanut butter ripple

Description

Similar to my chewy fudge recipe, but with peanut butter powder instead.

Has a similarly thick texture, though slightly less chewy. Peanut butter has a nice roasted flavor, not too sweet, and a nice salty kick.

Instructions

  1. Weigh and mix dry ingredients (pb powder, salt, sugar, dextrose)
  2. Heat the heavy cream in a medium saucepan and cook over medium-high heat until nearly boiling, then remove from heat.
  3. Slowly introduce the hot cream to the dry ingredients, whisking to fully incorporate. Whisk until smooth.
  4. Add back to the pot and heat for another minute or two, stirring with a rubber spatula to prevent scorching. This will add a more "roasted" flavor.
  5. Transfer to another container and store in the fridge.
