Description
My own version of Van Leeuwen Earl Grey. Portioned for a Ninja Creami (original, not deluxe)
Instructions
Combine dry ingredients, mix well.
Add milk and cream to a pot, combine with dry ingredients, mix well with a whisk.
Wisk and heat on stove top to 37c/100f for dissolving all the sugar.
Pour into ninja creami container, refrigerate until chilled.
Add Earl Grey extract, mix well, freeze for 24h.
Home made Earl Grey extract made w/ loose leaf Earl Gray tea and high proof unflavored liquor like Everclear 151-proof (75.5% ABV). 20g tea 70g everclear, steeped at room temperature for two weeks.
CHANGE LOG
v0.1: increased skim milk powder, heat only to 100f to melt sugar to not overcook the milk generating an off flavor.
v0.0: this may need an emulsifier.
