Description
A simple, clean, premium banana ice cream base made with steeped overripe bananas and turbinado sugar.
Tasting notes
For this iteration I used frozen bananas and steeped for ~12 hours, which imparted a strong banana flavor that I was very happy with. It was scoopable directly from the freezer, did not melt quickly, and had a great clean texture. Overall very happy with this base and the flavor will pair well with additional flavors.
Instructions
- Microwave chunks of frozen bananas until warm and remove the excess water
- Sprinkle bananas with a small amount of brown sugar (optional) and roast in the oven at 350F for 20 minutes
- While the bananas are roasting, mix the dry ingredients
- Whisk dry ingredients into milk and blend until smooth
- Add in cream, vanilla extract, and bananas
- Transfer to fridge and let bananas steep for 12-24 hours
- Filter the bananas out with a fine mesh strainer
- Churn
- Transfer to freezer to harden for at least 4 hours
