Description

My normal sweet cream base with vanilla + toasted milk powder.

The toasted milk powder adds a surprisingly complex caramel taste which has to be tasted to be believed. Easy to pair with other flavors.

Instructions

  1. Toast the milk powder (in a pan or in the over) until golden brown. Make sure not to burn
  2. Sift the toasted milk powder through a strainer into the other dry ingredients (sugar, dextrose, milk powder, salt, guar gum) and mix (to avoid clumping)
  3. Whisk dry ingredients into the milk and cream. If there is any unmixed powder, use a stick blender to finish it off.
  4. Move base into a sealed container and let age in fridge for at least 8 hours
  5. Churn
  6. Harden in freezer
