Description

Rich vanilla with pieces of Kägi Fret, a Swiss candy bar that’s like a lighter KitKat. You can sub KitKat or other chocolate wafer bar. The chocolate cover helps preserve the crunch of the wafer.

Instructions

  • whisk 2 eggs in large bowl until fluffy, 1 min or so. Gradually add sugar and skim milk powder. Keep whisking until incorporated, then whisk for another minute more.
  • add cream, milk, and vanilla and whisk until uniform.
  • Freeze 50g of chopped Kägi fret (or KitKat) for at least 12 hours. Freezing makes the pieces less likely to break when mixing into the ice cream.
  • For ninja creami, freeze ice cream mixture for 24 hours. Run on ice cream setting. Press a well into the center of the pint, then add 50g chopped Kägi Fret (or KitKat) into well. Either run on mix in setting or fold in with a spade to avoid crushing the pieces.

Makes about 1.25 quarts. Candy not included in recipe list to avoid contaminating the calculations.
