Description
apple cider gelato for the Creami Deluxe that should taste more like “apple cider” and less like “cold milk near an apple.” The secret is reducing the cider into a syrup first.
Ninja Creami Deluxe Apple Cider Gelato
Makes one 24-ounce Ninja Creami Deluxe container
Ingredients
Apple cider reduction
* 3 cups apple cider, about 720 g
* 1 cinnamon stick, optional
* 1 small strip orange peel, optional
* Tiny pinch of salt
Gelato base
* ¾ cup apple cider reduction, about 180 g, cooled
* 1¼ cups whole milk, about 300 g
* ½ cup evaporated milk, about 120 g
* ¼ cup heavy cream, about 60 g
* 65 g granulated sugar, about ⅓ cup
* 20 g light corn syrup, about 1 tablespoon
* 15 g nonfat dry milk powder, about 2 tablespoons
* ½ teaspoon vanilla extract
* ⅛ teaspoon xanthan gum
* Optional: ⅛ teaspoon cinnamon
* Optional: tiny pinch nutmeg or allspice
Instructions
1. Put the apple cider, cinnamon stick, orange peel, and salt into a small saucepan.
2. Simmer gently until reduced from 3 cups to about ¾ cup. This usually takes 25–40 minutes depending on pan size. Do not scorch it.
3. Remove the cinnamon stick and orange peel. Chill the cider reduction completely before mixing it with the dairy.
4. In a small bowl, thoroughly mix the sugar, milk powder, xanthan gum, and any dry spices. This prevents the xanthan from clumping.
5. Add the whole milk, evaporated milk, cream, corn syrup, vanilla, and cooled cider reduction to a blender.
6. With the blender running on low, gradually add the dry mixture.
7. Blend for 30–45 seconds, until smooth.
8. Taste the mixture. It should taste slightly too sweet and strongly apple-cider-like. Freezing will dull both sweetness and flavor.
9. Pour into the Ninja Creami Deluxe container, staying below the MAX FILL line. If you are slightly over, hold back the excess and use it after spinning if a re-spin is needed.
10. Freeze upright on a level surface for at least 24 hours.
11. Process using the Gelato setting if your machine has it, or Ice Cream if it does not.
12. If crumbly or powdery, add 1 tablespoon milk or reserved base and run Re-Spin once.
Optional swirl
After the first spin, make a small well in the center and add:
* 1–2 tablespoons apple butter, or
* 1 tablespoon caramel sauce
Use Mix-In or fold by hand.
Notes
Reducing the cider is important. Plain cider has too much water and not enough concentrated apple flavor for frozen dessert. The reduced cider gives a deeper apple flavor, while the milk, evaporated milk, and small amount of cream keep the texture closer to gelato than sorbet.
For a more caramel-apple style, replace 15 g of the sugar with brown sugar.
For the first batch, I’d keep the spice light. Too much cinnamon quickly turns apple cider gelato into “frozen holiday candle,” which is festive but not always desirable.
